Taco Soup

Makes 12 servings (1 cup)

Dairy-free, Egg-free, Wheat-free, Soy-free, Peanut-free, Treenut-free, Fish-free, Shellfish-free, Gluten-free

"A hearty, flavorful and slightly sweet soup that goes great with corn bread or tortilla chips."

Ingredients

1 lb hamburger, browned and drained
1/2 onion, diced
1 can stewed tomatoes
2-3 cans kidney beans
2 stalks celery, diced
2-3 large carrots, diced
8 oz can tomato sauce
1 cup beef broth
1 can tomato soup
1 can corn
1 TBSP chili powder
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp ground red pepper (optional - if you like it with a little kick)

Directions

Combine all ingredients in a large pot. Bring to a boil. Reduce heat and simmer 30-40 minutes or until carrots are done.
OR
Slow Cooker: Combine all ingredients in slow cooker and cook 6-8 hours on low.

For those who are able to have dairy, it's also great with a little shredded cheddar or sour cream added after soup is served.
