Blueberry Muffins (Egg Free Dairy Free)

Dairy-free, Egg-free, Peanut-free, Treenut-free, Fish-free, Shellfish-free

"So moist and sweet, one of our family's favorite breakfast foods!"

Ingredients

1 cup soy milk
1/4 cup vegetable or canola oil
2 heaping TBSP applesauce
2 cups flour
1/2 cup sugar
1 TBSP baking powder
1/2 tsp salt
1 cup fresh or frozen blueberries

Directions

1) Heat oven to 400 degrees. Line 12 muffin cups or grease bottom of pan (not sides).
2) Mix milk, oil and applesauce in a medium bowl. In another bowl mix flour, sugar, powder and salt. Add to liquid ingredients and mix until batter is moistened. There will be lumps in the batter. Fold in blueberries.
3) Bake 15-20 minutes or until tops are golden. Remove and let cool on a wire rack (if greased, let sit 5 minutes before removing).

Virginia Phillips these were great! I used 1 1/2 cups regular flour and 1/2 cup whole wheat. The whole family loved them!
