Makes 12 muffins
Dairy-free, Egg-free, Soy-free, Peanut-free, Treenut-free, Fish-free, Shellfish-free
"An easy, healthy breakfast muffin."
1 1/4 cups bran flakes, crushed
1 1/2 cups rice milk (or soy milk)
1/2 cup raisins
1/2 tsp vanilla
2 Tbsp applesauce
1 1/4 cup flour
1/4 cup oil
1/2 cup packed brown sugar
1 TBS baking powder
1/4 tsp salt
1/4 tsp cinnamon
1. Heat oven to 400 degrees. Grease bottoms of muffin cups, or use muffin cups.
2. Mix cereal, milk, raisins and vanilla in a bowl. Let stand 5 minutes.
3. Add oil and applesauce. Mix in remaining ingredients, mixing until just moistened. Do not overmix or muffins will not rise.
4. Pour into muffin cups. Bake for 20-25 minutes or until toothpick comes out clean. Let stand for 5 minutes before removing from pan.
